摘要: Inthisstudy,weaimedtoexaminetheinhibitoryeffectofPA003,aPediococcusacidilacticithatproduceslacticacidandantimicrobialpeptidespediocin,onpathogenicbiofilmformationonabioticsurfaces.PA003andpathogens(Escherichiacoli,SalmonellaentericaserovarTyphimurium,StaphylococcusaureusandListeriamonocytogenes)wereusedtoevaluateauto-aggregation,hydrophobicity,biofilmformationandbiofilmformationinhibitiononstainlesssteel,polyvinylchlorideandglassslidesintermsofexclusion,displacementandcompetition.Theresultsshowedthehighestauto-aggregationabilitieswereobservedforoneoftheE.colistrainsEAggEC(E58595)andthehighesthydrophobicstrainwasobservedwithEPEC(E2348/69)(51.9%).ThenumbersofbiofilmcellsofE.coli,S.Typhimurium,S.aureusandL.monocytogenesonstainlesssteel,polyvinylchlorideandglassslidecouponswereeffectivelyreducedbyapproximately4logCFU/coupon.Theseresultsdemonstratethatlacticacidbacteriacanbeusedasanalternativetoeffectivelycontroltheformationofbiofilmsbyfood-bornepathogens.
